Happy winter collision - oven baked fennel with fresh citrus, yes, oranges work as well with cooked version as they do in the raw salad. I baked thick slices of fennel with plenty of sea salt and a generous pour of olive oil, 180°C oven for about 60 minutes until they are soft and starting to caramelise. Add orange quarters, a couple of fine slices of red onion, extra virgin olive oil and a dash of red wine vinegar along with the orange’s juices. #eattheseaaon #fennel #fennelandcitrus #finocchi #winteringredients
‘Neighborhood Oranges’ all started when @insidersitaly invited me to a #fruttaurbana marmalade making class using the bitter oranges that grow all over the city. I heard about little social enterprises where unemployed women would make jam with the fruit to earn a little independence. It was too good to be passed up - foraged fruit, helping refugees, making real orange marmalade to smear on my Sunday morning toast. This is the 4th winter of the project, and even though the wild oranges haven’t ripened as early as they normally do (we are subbing in sweet Calabrians) the girls and I are back at it. The windows fog, the studio smells like a citrus grove and there are jars of the good stuff waiting for all the cool Romans who buy from us. Scout picnic, homemade and packaging free. The scout leaders have asked everyone to bring lunches without piles of plastic wrap or tin foil, which is not hard for me who up until now has put everything in paper and recycled paper bags. But for today’s ‘pranzo al sacco’ we went nude, just like lots of Aussie kids that take a lunchbox to school. In the box: half wholemeal buns with frittata and salami, soft lemon cakes and fruit.
